Seara Alimentos, a division of JBS has opened an innovation center for plant-based foods in Brazil. Named the Incredible Lab, the advanced food technology hub will set out to produce plant-based food for the global market.
The JBS lab brings together experts in science, gastronomy, technology and consumer trends, and is intending to be a global leader in the plant-based meat market. It has created Biomolecule 1, a pioneering product that has a similar taste and texture to meat; combining molecules and natural elements that are added to the plant-based protein’s fermentation process.
Seara Alimentos president Joanita Karoleski told Food Navigator Latam: “The world is constantly changing. Today there is a new way for everything and with food it’s no different. The search for vegetable proteins is a reality and we want to be leaders in the segment.”
Renata Do Nascimento, R and D and Innovations Manager at Seara Alimentos also said to Food Navigator: “It produces increased salivation leaving the taste buds totally free for new flavours, making the perception and taste experience with more unique and incredible juiciness.”
