Egg’n’Up: Laying Golden Egg Replacements for the Food Industry

The Israeli startup Egg’n’Up, a subsidiary of SavorEat, the company behind the 3D printing robot chef, describes itself as the hen that lays golden egg replacements.

The food industry relies heavily on eggs due to their versatility and multiple functionalities despite current price volatility, food safety issues, egg allergies, high environmental footprint, and the growing trend to eliminate animal proteins from everyday products.

According to Egg’n’Up, the reason behind the continued use of eggs in food processing is that available egg substitutes do not entirely satisfy the food industry’s requirements for functionality and taste.

1:1 egg replacement

Founded in 2021 by Racheli Vizman, Oded Shoseyov, and Ido Braslavsky, according to PitchBook, and supported by a team of managers with a track record in the food industry, the startup has raised $2.5 million to date from Israel’s Millennium Food-Tech the Israel Innovation Authority.

Using proprietary know-how from the Hebrew University and unique plant-based formulations, the team produces a clean-label substitute to help manufacturers eliminate eggs from food processing. The solution, a 1:1 egg replacement, is said to mimic every aspect of eggs, from their versatile functionalities to their taste, texture, and nutritional profile.

Egg’n’Up egg replacers bind, gel, foam, emulsify, texturize, and thicken for use in bakery, confectionery, desserts, sauces, noodles, plant-based meat, and other applications. In addition, the replacers are described as non-GMO and 100% clean-label, standing out for not containing E-numbers, methylcellulose, hydrocolloids, or transglutaminase.

“With a decisive consumer shift toward better-for-you products and growing consumer demand for transparency and simplicity, maintaining clean-label products that exclude undesired ‘E-numbers’ is critical,” the startup states on its website.

Improving the world

Egg’n’Up says it has created multiple prototypes of egg replacers tailored for various food applications, demonstrating their versatility and innovation. These prototypes have undergone successful trials with global and local food manufacturers, showcasing their potential in diverse markets.

Additionally, the team has achieved successful industrial trials, collaborating closely with food manufacturers to produce end products that meet industry standards and consumer expectations.
