Rival Foods to Showcase Its Newest Plant-Based Innovation at SIAL Paris

Rival Foods, a Dutch start-up known for its innovative shear cell technology, is set to introduce a new line of plant-based meat products at this year’s SIAL trade fair in Paris. Following the success of its plant-based ‘chicken’ range, which includes whole-cut filets, blocks, and pulled varieties, the company is expanding its offerings with a new range of ‘meat’ products.

Made from just six natural ingredients, including soy and wheat protein, the new meat pieces offer a high-protein, low-fat, and low-salt alternative, designed to replicate the texture and versatility of traditional meat. Rival Foods aims to cater to both the foodservice industry and home cooking, providing an option that fits seamlessly into a wide range of dishes without compromising on taste or nutrition.

Pioneering a New Approach to Plant-Based Whole-Cut Textures

Shear Cell technology, developed by Birgit Dekkers at Wageningen University, who is now the CEO of Rival Foods, uses heat and rotation to align plant proteins in a way that mimics the texture of whole-cut meats. The process, which functions similarly to a pressure cooker with a rotating component, deforms and realigns proteins, creating fibrous or flaky textures that resemble chicken breast, tenderloin, or fish fillet.

This method allows for the use of various protein sources like soy, pea, fava, and sunflower, while natural flavors, herbs, and spices are embedded within the protein matrix to release gradually during consumption, enhancing taste. Water plays a crucial role in ensuring the products’ juiciness.
