The Vegan Chef Institute launched on World Vegan Day, November 1st 2018, with the mission “to provide the vegan movement with a progressive centre of learning and innovation”.
Created by professional vegan chef, cooking teacher and food writer Day Redley and nutritionist and holistic health coach Chantal Di Donato, the Vegan Chef Institute aims to move forward veganism, sustainability and compassionate ways of being through communication, learning, research and development.
The kick-off of the institute’s launch is a fast-track vocational course designed to propel amateur cooks into their first professional vegan chef position. The 12-week course runs on Sundays from January 13th and it offers students a comprehensive package to help them take their first step in the cooking career ladder. The course includes a high proportion of practical classes: creating, scaling and adapting recipes, using specialist ingredients, the day-to-day running of a professional kitchen, raw food introduction, menu design and costing, Food Standards Agency compliance and presentation skills. The course also offers an internship scheme and 1-2-1 mentor hour each week.
