Veg.edible, which opened its doors at the end of last year, has now been officially certified as the first kosher vegan restaurant in Omaha, Nebraska. Under the supervision of Rabbi Mordechai Geiger and Rav Tal, Veg.edible has obtained Kashrut, ensuring adherence to Jewish dietary laws.
Founded by Stacie Van Cleave and Matt Hyde, Veg.Edible aims to provide a quick and casual dining experience that caters to a variety of dietary preferences and restrictions, including vegan, gluten-free, and nut-free options. All dishes are free from animal products and by-products, including meat, dairy, lactose, and gelatin. Ingredients such as sugar are sourced without the use of bone char.
Growing demand for kosher vegan options
The demand for alternative protein sources is growing among consumers, including those who follow kosher dietary laws. Several companies are responding by ensuring their products meet these requirements. In Israel, the cultivated meat companies Aleph Farms and SuperMeat have obtained kosher certification. In the United States, NIÚKE Foods, known for vegan condiments and quinoa milk, and the vegan chocolate brand 7th Heaven, are also certified kosher.
Filling the kosher gap in food service
Despite the growing availability of vegan products with kosher certification, finding options that are both 100% vegan and kosher in the food service sector remains a challenge. Veg.edible’s arrival fills this gap, offering a diverse menu that caters to the kosher community while accommodating various dietary restrictions. In the New York area, which has a large Jewish population, restaurants, including Coletta Restaurant, Jajaja, and Caravan of Dreams, are notable for providing both vegan and kosher foods.
Veg.edible’s offerings include Beyond Meat smash burgers, BBQ jackfruit sandwiches, chick’n bac’n ranch sandwiches, salads, tacos, nachos, and a variety of desserts. In addition to its brick-and-mortar location, Veg.edible also supplies treats to other local businesses across the Omaha metro area and provides catering services for weddings.
