• Germany’s Hotel and Catering Industry Still has a lot of Untapped Vegan Development Potential

    Vegconomist has long been following and reporting on vegan trends in the hotel and restaurant industry around the globe. The vegan trend has also long arrived in the German hotel and catering scene, and is becoming increasingly popular. Recently, we asked the German Hotel and Restaurant Association (DEHOGA Federal Association) about the current situation in Germany.

    First of all, the DEHOGA Federal Association makes it clear that vegetarian and vegan cuisine have been in vogue for years and that the association’s catering businesses are tailoring their food accordingly.

    The DEHOGA statement goes on to say: “We have noticed that the demand for vegetarian cuisine in the catering industry is increasing. Delicious vegetarian and vegan dishes are not just found on the Republic’s menus; vegetarian/vegan courses are also offered automatically or on request at gala or dinner events as an alternative to fish or meat dishes.

    The times when vegetarian cuisine was neglected are over. Modern vegetarian cuisine is fresh, varied and refined. On the other hand, 100 percent vegan offerings – from the kitchen to the furnishings to the entire infrastructure of an establishment – are the absolute exception. The market, target group and demand are simply too low for that at the moment.”

    The DAHOGA Federal Association’s assessment shows that there is still a lot of development potential in the vegan sector of the German hotel and catering industry. In other countries, however, a clearer trend reversal can already be observed.

    For example, The Caterer published a report on Great Britain just last month, according to which offering vegan options has become increasingly important for commercial success. Vegan food and menus are also becoming more popular in the US and Canada, and large restaurant and fast food chains are increasingly offering their customers vegan options.
