New Culture Partners with Chef Nancy Silverton to Launch “Revolutionary” Animal-Free Mozzarella in 2024

Precision fermentation startup New Culture announces it is partnering with iconic chef and restauranteur Nancy Silverton to launch its first product – animal-free mozzarella – in Silverton’s acclaimed Pizzeria Mozza restaurant in 2024. New Culture says the debut will mark a significant milestone in making its animal-free dairy cheese available to consumers.

As the co-owner of the renowned Mozza Restaurant Group, Silverton is known for her focus on high-quality pizza crust and premium mozzarella cheese.  According to New Culture, its product is the first animal-free cheese to meet Silverton’s high standards and be offered on the meny at any of her restaurants. The launch will feature two new pizzas: A traditional Margherita and a caponata pizza with eggplant, tomato confit, pickled onions and caperberries. 

New Culture says it worked closely with Silverton to develop the new recipes, and notes Silverton’s experimentation and input played a major role in helping the startup refine and prepare its first product for market.

Market debut

The partnership also includes a series of New Culture + Pizzeria Mozza launch events, which will serve as the public debut of New Culture’s cheese, while showing the custom pizzas. The first event is expected slated in early June at Pizzeria Mozza in Los Angeles, followed by additional events in Los Angeles, New York City, and San Francisco.

Building expert team

Described as the “world’s first” cheese made with animal-free casein, New Culture’s mozzarella offers the same melt and stretch of dairy cheese, but is made without any animal inputs. Using precision fermentation, the company says it is combining traditional cheese-making methods with innovative food tech, and its mozzarella bakes, bubbles and browns like the real thing. 

Over the past year, New Culture has been adding expert leaders to its team as it prepares for commercial launch in 2024, including hiring Follow Your Heart’s former VP of product development James Jones, and appointing Hu chocolate CEO Mark Ramadan to its board.

In 2022, the startup announced a partnership with agribusiness giant ADM to accelerate the commercialization of its animal-free mozzarella. To date, New Culture has raised over $25M in funding.
