Germany’s Planteneers, a leading developer and provider of customized plant-based products, has unveiled a range of meat alternatives featuring mycoprotein.
The products were developed with the company’s functional systems for plant-based meat — fiildMeat P and fiildMeat S — which can integrate mycoproteins to create products that combine “authentic enjoyment,” health, and sustainable production.
Mycoproteins are notable for their meat-like texture and nutritional profile, offering essential amino acids, valuable fiber, and low fat content. With the vegan food market projected to reach $40.53 billion by 2031 and consumers demanding minimally processed products, Planteneers offers manufacturers a solution for these trends.
“With its meat-like structure, mycoprotein not only brings functional advantages but also has an ideal nutrient profile. Mycoprotein has all the essential amino acids, valuable fiber, and a low fat content,” Dr. Pia Meinlschmidt, Team Lead Product Management at Planteneers, shared.
Tailored mycoprotein content
Planteneers provides tailored mycoprotein content and the necessary functional systems to support manufacturers in the development of innovative food products.
For example, Planteneers’s fiildMeat P 151402, used for making favorites such as meatballs, burger patties, and rissoles (meat cakes), can feature 22% mycoprotein content, raising the product’s fiber content by 25%. Meanwhile, plant-based chicken breasts, chicken schnitzel, and nuggets show even better results: adding 40-45% mycoprotein to the functional system raises the fiber content by up to 47%.
In addition, Planteneers’s fiildMeat S-series functional systems can be used to make cold cuts, leveraging the texture and nutritional profile of mycoproteins. A 20% combination delivers products with more fiber and protein and lower fat content since less oil is needed in manufacturing.
According to Planteneers, products with mycoprotein can be marketed as “high in fiber” or a “source of fiber” under EU regulations, appealing to health-conscious consumers interested in digestion and gut health. “This is a very exciting feature, especially in terms of marketing. Many customers tell us that this aspect plays an important role from a marketing point of view. Digestion and gut health are more and more in focus due to their importance for overall well-being. Thus, products with mycoprotein offer two benefits – sustainability and healthy eating.”
Meeting consumer expectations
Planteneers, headquartered in Ahrensburg, is part of the Stern-Wywiol Gruppe and, along with its sister company Hydrosol, develops and produces custom system solutions for plant-based meat, fish, and dairy manufacturers.
This year, the German company introduced a new technology for marbled and fat-layered steaks, emulsifying solutions for fermented dairy and desserts such as tiramisu and cheesecake, and customized solutions for plant-based meat products Italian style.
“We deliver the whole package. With our research and development work on the raw material, we can adapt the mycoprotein content to the specific application,” added Dr. Meinlschmidt. “With the right functional systems, we develop new formulations that meet consumers’ rising expectations.”
The company is currently presenting some of its plant-based meat innovations at FiE in Frankfurt.
