The company, which has been at the forefront of the cultivated meat industry, now has permission in at least one jurisdiction to sell its cultivated beef (Aleph Cuts) is doubling down on efficiency, market alignment, and looking at scalability. “Cultivated meat is a new animal protein category that is actually meeting expectations for a more sustainable, healthier, and delicious new experience,” Aleph Farms explains. “Instead of farming the whole animal, slaughtering them, and then harvesting meat from their carcass, we’re able to directly grow the developed part of the animal—the interesting products out of its whole body.” One of the biggest milestones for …

A Deep Dive into the Role of 3D Scaffolds as the Building Blocks for Cultivated Meat

In addition to scaling and cost hurdles, cultivated meat production faces the unique challenge of developing final products that meet the consumer’s expectations of conventional animal-based meat, including larger pieces akin to whole cuts. However, most prototypes are made from ground meat and do not look exactly like whole cuts. Why is this the case? 3D scaffolds Companies in the space are experimenting with 3D structures or scaffolds to recreate the structure and taste of animal tissue to make complex products such as steaks, filets, and even burgers. In animals, the extracellular matrix (ECM), a structure made of proteins and carbohydrates, supports the cells and guides them in their growth journey: differentiation and tissue development to make the different organs and body parts. Scaffolds for …

First European Application for the Sale of Cultivated Meat – What You Need to Know

Israel’s Aleph Farms has submitted an application to Swiss regulators to sell its cultivated beef. Aleph Farm’s application to the Swiss authorities is submitted with the goal of selling the world’s first cultivated beef steaks under the Aleph Cuts brand in Switzerland, which would represent the first in the continent if approval is granted.   A life-cycle assessment shows that cultivated beef could result in a reduction of 92% of carbon footprint if renewable energy is used in the production process, 95% of land use and 78% of water requirements, compared to conventional beef production. Swiss and EU regulatory processes In a manner similar to that of the European Union, the Swiss regulatory framework encompasses a robust and well-founded procedure for assessing the safety of …

Aleph Farms & Enzymit Develop Insulin Proteins for Cheaper Animal-Free Serum

Cultivated meat company Aleph Farms and biotech company Enzymit announce the successful development of new processing aids for animal-free serum in the form of insulin-like proteins, to support cell growth. This breakthrough will enable cost-efficiency in cultivating meat at scale. The cultivated meat industry is rapidly growing but relies on expensive and low-scale pharmaceutical inputs that often do not meet the requirements for cell growth in bioreactors. Aleph Farms, poised to reduce growth media costs to launch its petit steak at scale, explains that insulin proteins are not widely available in quantity, quality, and cost for large-scale production. Therefore, cell ag companies looking to grow slaughter-free meat must develop non-animal-derived processing aids to advance their operations, says Aleph Farms. Developing processing aids “Developing more suitable processing …
