Miami-based Peekaboo Organic Ice Cream contains “hidden” ingredients like cauliflower, carrots and spinach and promises “veggies in every bite.” According to Mintel, the world’s leading market intelligence agency, Peekaboo Organic Ice Cream was named the most innovative ice cream launch of 2018. 

Determined to win the ‘eat your veggies’ battle with her children, Founder, Jessica Levison, began experimenting with hiding vegetables in their ice cream. She perfected the consistency and texture and found the flavor pairings that complimented each other best. The current dairy based flavors include chocolate with cauliflower, strawberry with carrot, mint with spinach, vanilla with zucchini, and cotton candy with beets. 

It was recently announced that Peekaboo Organic Ice Cream plans to launch vegan flavors of its veggie-based ice cream this fall. “We have several vegan flavors in the pipeline, as well as a few favorites with a twist,” Levison told Foodnaviator-USA. Currently, the base for the vegan flavors remains a secret. 

When launched, the vegan ice cream will be available online, and by spring 2020, it will be available in Whole Foods, Weis Markets, and Safeway.
