Rebellyous Foods Launches Spicy Kickin’ Patty as Students Demand Bolder Plant-Based Flavors

Rebellyous Foods, a plant-based meat technology company, has introduced a new Spicy Kickin’ Patty designed for K-12 schools, restaurants, and foodservice providers. This spicy chicken patty alternative is an extension of the company’s plant-based chicken line, which includes nuggets, tenders, and patties.

According to Symrise Insights, consumer demand for spicy flavor profiles in chicken sandwiches continues to grow, and restaurants are seeking to expand their menu options beyond classic items. Demand is particularly high among Gen Z, who seek bolder and spicier flavors, a trend noted by McCormick and Co., the company behind Frank’s Red Hot and Cholula.

The new Spicy Kickin’ Patties are entirely plant-based and free from cholesterol, antibiotics, and hormones. They are designed to mirror the texture and taste of traditional chicken patties, with a spicy, crunchy coating. In addition to being easy to prepare, the patties meet the USDA National School Lunch Program’s requirements, offering two meat/meat alternate credits and a 1/4 grain credit.

Students demand spicy

Sarah Keiser, Child Nutrition Technician at Newark Unified School District in California, commented on the appeal of Rebellyous products in school menus: “Our students love the Rebellyous Plant-Based Kickin’ Nuggets. Even our staunch meat-eating students enjoy the product since it is so good.

“We look forward to the new Spicy Plant-Based Patties and can’t wait to put them on the menu for our students to enjoy. I know they will be a hit, especially with our older students who demand anything spicy, and I expect them to fly off our shelves.”

The announcement follows Rebellyous’ recent debut of its Mock 2 production technology, developed in collaboration with RMS Foods. This new system allows for plant-based meat production at a rate of 2,500-5,000 pounds per hour, a step toward achieving cost-competitiveness with conventional meat. According to the Good Food Institute, price remains a significant barrier for plant-based products in the market. Rebellyous’ technology aims to address this by facilitating cost-effective, large-scale production.

Focus on foodservice channels

Rebellyous Foods currently supplies products to over 300 school districts nationwide, including a recent partnership with Chicago Public Schools. Through Open Kitchens, Rebellyous patties are now available at more than 100 schools in the Chicago district, served alongside menu items like waffles as a plant-based option.

Distribution for the Spicy Kickin’ Patty will focus exclusively on foodservice channels, with priority given to schools, stadiums, and event venues. Rebellyous Foods CEO Christie Lagally highlighted the company’s plans for broader distribution, noting, “We’re rolling out distribution to existing customers and anticipate an influx of new restaurant chains, franchises, and food establishments spicing up their menus with the Spicy Kickin’ Patty.”
