“Eggscellent” plant-based ingredient for vegan baked goods

Ever-increasing sales of plant-based, baked goods are a strong incentive for the creation of innovative new product launches in the category. Here, a new compound from Loryma ensures optimal dough stability and volume without the need for eggs or milk. Top-quality, great-tasting muffins and sponge cakes are just two of the numerous product concepts made possible with Loryma’s latest ingredient innovation, Lory® Stab. While meat and dairy substitutes are now standard supermarket offerings, there is still a distinct lack of variety when it comes to vegan baked goods, despite increasing consumer demand. French plant-based bakery Land&Monkeys has launched ‘le Parisien’, a vegan version of one of the most popular snacks in France: the ham-and-butter sandwich. Known in the country as jambon beurre, the two-ingredient sandwich became a symbol in Paris in the 1950s, and it is “indisputably” France’s favorite sandwich, explains Land&Monkeys. To replace this bakery classic with ethical and sustainable alternatives, Land&Monkeys partnered with two food tech companies.  Zero pig, zero cow The zero pork ham is the latest development of the French startup La Vie. The vegan ham is said to have the same taste and texture as traditional charcuterie without using texturizing agents and is a source of protein (19 grams of protein per 100). Bridor, a French baked goods specialist, has introduced two new 2023 vegan Viennese pastries under its Clean Label Bridor line: vegan croissants and vegan pan au chocolat. Described as light and crispy, the new vegan goods rival the well-known classics due to a key ingredient developed exclusively for Bridor: high-quality margarine.  Master baker and pastry chef Jean-Luc Kasper explains, “After long years of development, we worked with our suppliers to select a margarine with very special properties: its melting point is similar to that of butter, which gives the dough an incomparable texture during lamination and, in addition, a taste that is very close to butter. A special selection of oils, such as coconut and rapeseed oil, makes this possible.” Other premium ingredients, such as …

Jennifer Stewart of Belfast’s Bread and Banjo Bakery said that veganism “really isn’t that hard to cater for”, explaining that she had swapped milk and butter in some products for vegan alternatives. On Instagram, she described glazing some baked goods with oat milk instead of eggs to make them suitable for vegans. Speaking to the Belfast Telegraph, Stewart said, “I think veganism is becoming more popular and there are more and more vegan alternatives out there. It is the healthier …
