Dutch Structuring Technologies Improves Precision of the “Next Big Technology” in Meat Alternatives
Textured protein producer Dutch Structuring Technologies (DST) is working to improve the precision of its innovative production technology using a solution developed by Rockwell Automation. DST is known for its novel Sheartex technology (previously called Continuous High Shear), which is said to be ideal for producing long-fibered whole cuts of plant-based meat or fish. Sheartex uses lower processing temperatures than extrusion, reducing the need for additives and post-processing. To improve the technology, DST has adopted Rockwell Automation’s Kinetix servo solution, which uses a range of intelligent devices to achieve precision control of different continuous shearing and mixing formulae.
