Textured protein producer Dutch Structuring Technologies (DST) is working to improve the precision of its innovative production technology using a solution developed by Rockwell Automation.
DST is known for its novel Sheartex technology (previously called Continuous High Shear), which is said to be ideal for producing long-fibered whole cuts of plant-based meat or fish. Sheartex uses lower processing temperatures than extrusion, reducing the need for additives and post-processing.
To improve the technology, DST has adopted Rockwell Automation’s Kinetix servo solution, which uses a range of intelligent devices to achieve precision control of different continuous shearing and mixing formulae. Co-developed with Dutch mixing system specialist Sobatech and supported by Rockwell Automation’s authorized distributor partner Routeco Netherlands, Sheartex reportedly has the potential to bring down the cost of meat alternatives to achieve parity with animal proteins.

Introducing a paradigm shift
DST was founded to create and produce next-generation meat alternatives with new technologies designed to outperform the flavoring, flexibility, and scalability of existing processes. The company specializes in developing and supplying advanced solutions like the Sheartex machine to the food processing industry.
“The meat- and plant-protein markets are developing at a staggering pace,” said Roger Gaemperle, Head of Industry Strategy and Marketing EMEA Consumer Segment at Rockwell Automation. “New technologies and digitalization are expanding what is possible in terms of processing, control, and management. Meat replacement is seeing huge growth, but until now, extrusion has been the only widely available technology. This new shearing process will introduce a paradigm shift in terms of what is now achievable.”
